  • 600g sugar
  • 400g water

Combine the water (400g) and sugar (600g) in a saucepan and heat over medium heat. **It is crucial NOT to stir the mixture or shake the pan from the beginning to the end to prevent sugar crystals from forming.** (Tip: Adding a bit of corn syrup can also help prevent crystallization.)

Step 4

Once the sugar has completely dissolved and the mixture turns clear, it will start to boil. Gradually, large bubbles will form. Continue cooking over medium heat until these large bubbles subside and small, rapid bubbles start to appear, resembling a gentle simmer. Then, reduce the heat to low.

Step 5

The syrup needs to simmer gently over low heat for quite some time. This step is essential for achieving the right syrup consistency. The cooking time can vary depending on the pot material and heat source, but simmering for about 20 minutes usually works well. (Caution: If the syrup is too thin, it won’t harden; if cooked for too long, it might burn.)
