  • About 10-15 fresh strawberries
  • 600g sugar
  • 400g water

Thread 2-3 strawberries onto each wooden skewer, leaving a little space between them. Overcrowding can make it difficult to coat evenly with syrup, so maintain a proper spacing.

Now, let’s make the star of the Tanghulu: the syrup! Combine the water (400g) and sugar (600g) in a saucepan and heat over medium heat. **It is crucial NOT to stir the mixture or shake the pan from the beginning to the end to prevent sugar crystals from forming.** (Tip: Adding a bit of corn syrup can also help prevent crystallization.)

Once the sugar has completely dissolved and the mixture turns clear, it will start to boil. Gradually, large bubbles will form. Continue cooking over medium heat until these large bubbles subside and small, rapid bubbles start to appear, resembling a gentle simmer. Then, reduce the heat to low.

The syrup needs to simmer gently over low heat for quite some time. This step is essential for achieving the right syrup consistency. The cooking time can vary depending on the pot material and heat source, but simmering for about 20 minutes usually works well. (Caution: If the syrup is too thin, it won’t harden; if cooked for too long, it might burn.)

When small bubbles start to rise consistently on the syrup’s surface, the syrup is ready. Dip a skewer of strawberries into the syrup and quickly coat them. For fruits with high juice content like strawberries, it’s best to apply a thin coat of syrup to prevent it from becoming too thick. Work swiftly to ensure a smooth coating.
