How to Make a Delicious Sweet Potato, Apple, and Cheese Pancake
A delightful snack combining the sweetness of sweet potatoes, the tartness of apples, and the savory richness of cheese! Easy to make and perfect for enjoying with your children.
Main Ingredients
- 2 medium-sized sweet potatoes
- 1 apple (small)
- 2 slices cheddar cheese
- 3 Tbsp pancake mix (buchim garu)
- Pinch of salt
- Cooking oil as needed
Cooking Instructions
Step 1
First, let’s prepare the stars of our delicious sweet potato snack: the sweet potatoes and apple. You’ll need 2 medium sweet potatoes and 1 small apple. The recipe is not strict with measurements, so feel free to adjust as you like. If your sweet potatoes have dirt on them, wash them thoroughly under running water. Peel both the apple and the sweet potatoes before proceeding.
Step 2
Next, use a mandoline slicer or a sharp knife to julienne the prepared sweet potatoes and apple into thin strips. Thinly sliced ingredients will cook more evenly and result in a softer, more delicious texture. Try to cut them into uniform thickness for the best result.
Step 3
Rinse the julienned sweet potatoes under cold water a couple of times. This helps to remove excess starch, which will make your pancakes crispier. After rinsing, drain them well in a colander to remove all excess water.
Step 4
In a large bowl, combine the drained julienned sweet potatoes and apple. Add a pinch of salt and mix gently to season the ingredients. Then, add 3 tablespoons of pancake mix and stir everything together to form a batter.
Step 5
The amount of pancake mix is key here! Using too much can make the pancake taste dry or doughy. You only need enough mix to help the ingredients bind together. Don’t add all the mix at once; gradually add it while mixing, adjusting the consistency until the ingredients are just held together. The batter should be thick enough to hold its shape but not overly dense.
Step 6
Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Spoon portions of the batter onto the hot pan, spreading them out into thin, even circles. Making them too thick might prevent them from cooking through.
Step 7
Once the bottom side starts to turn golden brown and crispy, place half a slice of cheddar cheese onto one half of each pancake.
Step 8
Carefully fold the other half of the pancake over the cheese to create a half-moon shape. The batter might break slightly as you fold, but don’t worry – gently reshape it. Once the bottom is golden brown, carefully flip the pancake and cook the other side until also golden brown and the cheese is melted and gooey. Keep an eye on the heat to prevent burning.
Step 9
If you prefer smaller portions, you can make bite-sized pancakes. Simply place smaller amounts of batter onto the pan and cook them until golden brown on both sides. These are easier for little hands to hold and eat.
Step 10
And there you have it – your delicious Sweet Potato, Apple, and Cheese Pancakes are ready! Serve them warm for the best experience, with the cheese wonderfully melted. They make a fantastic snack for kids or a light meal alternative. Enjoy your tasty creation!
