Main Ingredients
  • 1 mini pumpkin
  • 1 slice cheese
  • 1 slice ham
  • 1 egg
  • 1 pinch salt
  • A little black pepper
  • Generous amount of mozzarella cheese (shredded)
  • A little parsley flakes

Pumpkin Wash
  • 2 tbsp baking soda

Cooking Instructions

Step 1

First, let’s prepare the mini pumpkin for our delicious Eggslut. Sprinkle 2 tablespoons of baking soda evenly over the mini pumpkin. Then, use your hands to scrub the pumpkin’s skin vigorously. The baking soda will help remove any surface impurities.

Step 2

Place the pumpkin in clean water. Gently rub it while submerged, making a ‘squeaky’ sound to ensure a thorough clean.

Step 3

Rinse the pumpkin under running cold water multiple times to wash away any remaining baking soda or dirt from the peel.

Step 4

Now, let’s prepare the filling ingredients. Finely chop the sliced ham and cheese into small pieces, about 1 cm in size. This makes it easier to fill the pumpkin cavity evenly.

Step 5

Place the washed mini pumpkin on a plate, cover it with plastic wrap, and microwave for 2 minutes and 30 seconds to 3 minutes. This pre-cooking step will make it much easier to scoop out the pumpkin’s insides later.

Step 6

Carefully remove the plastic wrap after microwaving. Let it cool slightly as it will be hot. Then, with the stem end facing up, use a knife to cut off the top part, creating a lid. Be careful not to cut too deep.

Step 7

Now it’s time to remove the seeds from the pumpkin. Using a small paring knife, carefully cut around the center of the pumpkin to create an opening for removing the seeds. This will make scooping out the seeds much easier.

Step 8

Gently scrape out the inside of the pumpkin with a spoon. Be careful not to damage the pumpkin flesh. Scrape until all seeds and the white pith are removed, creating enough space for the filling. This ensures a good amount of filling can be added.

Step 9

Fill the hollowed-out mini pumpkin cavity first with half of the chopped cheese (1/2 slice) and half of the chopped ham (1/2 slice). The savory cheese and ham will complement the pumpkin’s natural sweetness beautifully.

Step 10

Next, carefully crack a fresh egg into the center space. Gently poke the yolk with a fork or toothpick to break it. This allows the egg to cook evenly and spread nicely.

Step 11

Season the egg now. Sprinkle a pinch of salt and a little black pepper over the egg. This simple seasoning enhances the egg’s flavor.

Step 12

Place the filled pumpkin back on the plate, cover with plastic wrap, and microwave for another 3 minutes. This will cook the egg to a perfect, soft consistency.

Step 13

Once out of the microwave, arrange the remaining half of the sliced ham (1/2 slice) and the remaining half of the sliced cheese (1/2 slice) nicely on top of the cooked egg. They will melt beautifully over the warm egg.

Step 14

After adding the ham and cheese, fill any remaining empty spaces generously with shredded mozzarella cheese. The cheese will melt and become wonderfully gooey.

Step 15

Now it’s time to bake it in the air fryer for that perfect golden finish. Preheat your air fryer to 180°C (350°F) and bake the mini pumpkin eggslut for 5 minutes. The cheese should be melted and golden brown.

Step 16

After about 5 minutes, when you can smell the delicious aroma, carefully remove the finished pumpkin eggslut from the air fryer. The golden, melted cheese will look very appetizing.

Step 17

Be careful as it’s hot. Use a knife to cut the mini pumpkin eggslut into bite-sized pieces. Cutting them into individual portions makes them easy to eat and visually appealing.

Step 18

Finally, transfer the completed mini pumpkin eggslut to a nice plate. Sprinkle a little parsley flakes on top for an extra touch of fragrance and color. Enjoy your delicious creation!
