Easy Front Leg Pork Stir-fry Recipe using Gochugaru Paste – Revealing the Secret Ingredient Kids Adore!
Everyone loves a delicious Jeyuk Bokkeum! While every household has its own special recipe, today I’m sharing a quick and easy Jeyuk Bokkeum recipe made with gochugaru (red pepper flakes) paste for a rich flavor, skipping the gochujang (red pepper paste). Add just one secret ingredient, and it transforms into a ‘magical’ Jeyuk Bokkeum that kids absolutely adore! My nephew can’t get enough of it. This recipe guarantees you’ll finish your rice in no time!
Main Ingredients
- 300g Pork Shoulder (Front Leg)
- 1/2 Onion
- 1/2 Green Onion (Scallion)
- 3 cloves Garlic
- 1 Korean Chili Pepper (Cheongyang)
- 2 leaves Napa Cabbage (Accordion variety)
Cooking Instructions
Step 1
1. Prepare the Ingredients: First, chop the Napa cabbage into bite-sized pieces. Slice the garlic thinly or mince it. Thinly slice the onion and cut the green onion diagonally. Adding Napa cabbage will give the stir-fry a delightful crunchy texture.

2. Stir-fry the Pork (Phase 1): Lightly oil a pan and add the pork shoulder. Stir-fry over medium-high heat just until the outside is lightly browned. Don’t overcook it! The key here is to retain as much of the pork’s natural juices as possible for cooking.

3. Add Vegetables and Stir-fry: Once the pork is partially cooked, add the prepared onion, garlic, and green onion to the pan. Stir-fry them together quickly, just until the vegetables slightly soften.

4. Make and Cook the Sauce: Pour in 150ml of water and reduce the heat to medium-low. Now, add 1.5 Tbsp soy sauce, 1.5 Tbsp sugar, 3 Tbsp gochugaru, and 1/2 Tbsp oyster sauce. This is where our ‘secret ingredient’ comes in – add 1/2 Tbsp curry powder! The curry powder adds a unique, rich ‘sweet and savory’ flavor that’s a level above typical Jeyuk Bokkeum, making it a huge hit with kids. You’ll experience a totally new taste sensation!

5. Mix and Simmer the Sauce: Stir to combine the sauce ingredients evenly with the pork and vegetables. Then, increase the heat back to medium and let it simmer until the sauce thickens slightly. If the sauce becomes too thick, add a little more water. Finally, add the Napa cabbage, finely chopped Korean chili pepper, and 1 Tbsp sesame oil. Stir-fry briefly, just enough to coat everything, and it’s ready!
