Main Ingredients
  • 1/2 can Spam (approx. 200g)
  • 1 bowl of freshly cooked warm rice
  • 1 Tbsp minced garlic
  • 1/2 onion
  • 1 Tbsp sugar
  • 2 Tbsp soy sauce
  • 2 swirls of cooking oil (approx. 2 Tbsp)
  • 1 fresh egg yolk
  • A little shredded seaweed (gim)
  • A little sesame seeds

Cooking Instructions

Step 1

First, prepare one can of Spam (approx. 200g) and cut it in half, using about 100g for one serving. Rinse the Spam briefly in hot water to remove excess saltiness and oil. Place the rinsed Spam in a plastic bag and mash it with a fork or your hands. Mashing the Spam helps the sauce to absorb better and improves the texture.

Step 2

Wash and peel half an onion, then finely mince it into small pieces, suitable for eating with rice. The sweetness of the onion will enhance the flavor of the Spam Rice Bowl.

Step 3

Heat a pan over medium heat and add about 2 swirls (approx. 2 Tbsp) of cooking oil. Add the mashed Spam and stir-fry until fragrant. It’s important to maintain medium heat and stir evenly while cooking the Spam.

Step 4

Continue to stir-fry the Spam until it turns golden brown and slightly crispy. This process removes any gamey smell from the Spam and brings out its savory flavor. Stir-frying until it’s as crispy as possible is the key to a delicious taste.

Step 5

Once the Spam is well-fried, add the minced onion and 1 Tbsp of minced garlic to the pan and stir-fry together. Cook until the onion becomes translucent and the garlic is fragrant. The ingredients will blend together, releasing a wonderful aroma.

Step 6

Reduce the heat to low, add 1 Tbsp of sugar, and stir constantly to coat the ingredients evenly. As the sugar melts, it will caramelize the surface of the ingredients, giving them a glossy sheen and a sweeter taste. Be careful not to burn it while stir-frying.

Step 7

When the ingredients are glossy and well-fried, push them to one side of the pan. Pour 2 Tbsp of soy sauce along the edge of the pan. Let the soy sauce simmer over medium heat until it slightly caramelizes, then mix everything together and stir-fry. A simple yet deeply flavorful Spam Rice Bowl sauce is now ready.

Step 8

Fill a bowl with warm rice and generously top it with the delicious Spam Rice Bowl sauce you just made. Finally, add a fresh egg yolk, savory shredded seaweed, and a sprinkle of sesame seeds to complete Chef Ryu Soo-young’s Spam Rice Bowl! Enjoy this magical dish that you’ll finish in no time.
