Ingredients
- 100g dried sweet potato stems
- 1 Tbsp soy sauce (Korean soup soy sauce)
- 2 Tbsp sesame oil
- 1 Tbsp chopped green onion
- 2/3 Tbsp minced garlic
- 1 pinch salt
- 5 Tbsp water
- 1/2 Tbsp sesame seeds (whole or crushed)
Cooking Instructions
Step 1
First, rinse the dried sweet potato stems thoroughly under running water. Then, place them in a large bowl, cover with water, and soak for 30 minutes to 1 hour until fully rehydrated. (Adjust soaking time based on how dry they are.)
Step 2
Gently touch the rehydrated sweet potato stems to check for softness. Rinse them once more with cold water. Lightly squeeze out excess water with your hands, then cut them into bite-sized pieces, about 5-7 cm long. Heat a lightly oiled pan over medium heat and add the prepared sweet potato stems. Stir-fry, checking for doneness.
Step 3
Once the sweet potato stems are slightly cooked, add soy sauce and salt for seasoning. Pour in 5 tablespoons of water. Stir to combine the ingredients and let it simmer and reduce until slightly saucy. Simmering this way will make the stems much softer and allow the seasoning to penetrate deeply for a richer flavor.
Step 4
Now, add minced garlic and chopped green onion and stir-fry together to enhance the aroma. Finally, drizzle in 2 tablespoons of sesame oil and sprinkle with 1/2 tablespoon of sesame seeds (whole or crushed are both fine). Mix gently until everything is well combined and glossy.
