Main Ingredients
  • 1kg Sea Eel

Spicy Gochujang Glaze
  • 3 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Rice Syrup or Corn Syrup
  • 1 Tbsp Sugar
  • 2 Tbsp Maesil Cheong (Plum Extract)
  • 2 Tbsp Mirin (Rice Wine)
  • 1 Tbsp Minced Garlic
  • A dash of Black Pepper (about 4 shakes)
  • 1 tsp Ginger Powder (optional)

Cooking Instructions

Step 1

Fresh sea eel doesn’t have a strong odor, even with its slimy coating. Simply rinse it gently under cold running water. If you prefer a more thorough cleaning, you can lightly coat the eel with flour and then rinse; this helps remove any remaining sliminess and odor.

Step 2

Pat the rinsed eel dry gently with paper towels. Ensuring the eel is well-dried is key for the glaze to adhere properly and for even cooking.

Step 3

Now, let’s prepare the delicious glaze! In a bowl, combine 3 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp rice syrup or corn syrup, 1 Tbsp sugar, 2 Tbsp maesil cheong, 2 Tbsp mirin, 1 Tbsp minced garlic, 1 tsp ginger powder (optional, adjust to your preference), and a few shakes of black pepper.

Step 4

Mix all the glaze ingredients thoroughly until smooth. Letting the mixture sit for a short while allows the flavors to meld beautifully. While it’s best made in advance, even a few minutes while the eel grills is sufficient.

Step 5

Eel can be grilled in an oven, on a pan, or over a direct grill – choose your preferred method! A helpful tip for grilling glazed eel to prevent burning: it’s best to cook the eel slightly first before applying the glaze. Applying the glaze too early can cause it to burn. Today, we’ll be using a grill.

Step 6

Grill the eel pieces on both sides until they are lightly browned and partially cooked. Maintain a medium heat to ensure they cook through without burning.

Step 7

Once the eel is partially cooked, generously brush the prepared gochujang glaze onto both sides. Continue grilling, brushing with more glaze 2-3 times as needed, reducing the heat slightly to prevent burning. This repeated glazing builds a rich, deep flavor into the eel.
