- 1 King Oyster Mushroom (for a plump mushroom; 2 recommended for standard size)

Cooking Instructions
Step 1
First, prepare the king oyster mushrooms. The mushroom I used was quite plump, so I only needed one. However, for standard-sized mushrooms, it’s recommended to use two. Wash the prepared mushrooms thoroughly and pat them dry. Then, cut each mushroom in half. If you’re using two mushrooms, you can trim a very small, flat section off the bottom of each so they stand upright more stably after grilling.

Now, let’s slice the mushrooms for easy eating. To prevent the knife from going all the way through, place chopsticks on both sides of the mushroom. Then, using a knife, make even cuts about 0.3cm to 0.5cm apart. Slicing them this way will allow them to fan out beautifully like an accordion when cooked, enhancing the texture.

Next, we’ll make the buttery sauce to add flavor to the mushrooms. In a microwave-safe bowl, combine the butter, minced garlic, a pinch of salt, and some shredded mozzarella cheese if you like. Microwave for 30 seconds, then stir, and microwave again for another 30 seconds until the butter is completely melted and all ingredients are well combined. Carefully spread this melted butter sauce in between the slices of the cut king oyster mushrooms. Don’t worry too much if the mushroom shape shifts a bit; just spread it generously.
Step 4
It’s time to grill the mushrooms to perfection! You can place them directly into your preheated air fryer or oven without needing to preheat it first. Cook at 190°C (375°F) for 7 minutes. After 7 minutes, check the mushrooms. If you’d like them a bit more golden and crispy, continue to cook for an additional 2 minutes to finish. Enjoy them immediately while warm to savor the rich butter flavor and chewy texture!
