Main Ingredients
  • 1 pack Pork spare ribs (approx. 500g)
  • 5-6 Bay leaves
  • 1 cup Soju (200ml)

Perfectly Balanced Sauce
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 6 Tbsp Soy sauce
  • 3 Tbsp Sugar
  • 2 Tbsp Corn syrup (or oligodang)
  • 1 Tbsp Minced garlic
  • 2 Tbsp Mirin (or cooking wine/cheongju)

Cooking Instructions

Step 1

First, prepare the pork spare ribs. Rinse them thoroughly under running water, then soak them in cold water for about 30 minutes to remove any blood. This step is crucial for eliminating any gamey odor and ensuring a clean, pure flavor.

Step 2

While the ribs are soaking, let’s make the delicious sauce. In a bowl, combine 2 Tbsp gochugaru, 6 Tbsp soy sauce, 3 Tbsp sugar, 2 Tbsp corn syrup, 1 Tbsp minced garlic, and 2 Tbsp mirin. Mix everything well until the sauce is smooth. This golden ratio will create a deep, rich flavor.

Step 3

In a pot, add enough water to cover the ribs. Add 1 cup of soju and 5-6 bay leaves. The soju and bay leaves will work effectively to remove any unwanted odors from the ribs.

Step 4

Once the water comes to a rolling boil, add the soaked spare ribs and blanch them for about 10 minutes. Cook them just until the redness disappears and they are slightly tender.

Step 5

As the ribs blanch, you’ll hear the water bubbling gently. This process effectively removes impurities and any residual gaminess.

Step 6

Remove the blanched ribs from the pot and rinse them thoroughly under cold running water. This ensures any impurities or blood residue clinging to the bones are removed for a cleaner taste. Drain the ribs and transfer them to a frying pan.

Step 7

Tip! To help the sauce penetrate the ribs more effectively, you can score them lightly with a knife. This will make them even more flavorful! Make a few shallow cuts as shown in the picture. (Optional)

Step 8

Pour 300ml of water and the prepared sauce into the frying pan with the ribs. Bring it to a boil over high heat, then reduce to medium-low heat and let the ribs simmer and cook in the sauce.

Step 9

If you prefer a spicier kick, feel free to add some chopped dried chilies or fresh green chilies during this stage, according to your preference. This will add another layer of delicious flavor.

Step 10

As the sauce begins to thicken, stir the ribs occasionally to prevent them from sticking or burning. Continue to simmer until the sauce is nicely reduced and coats the ribs beautifully. I simmered mine for about 10-15 minutes until the sauce was thick and glossy. Make sure to stir frequently to avoid burning!
