First, thoroughly wash the fresh crabs under running water, using a brush to scrub every nook and cranny of their shells. Ensure no dirt or debris remains, then place them in a colander to drain the water completely before preparation.

When steaming the crabs, it’s crucial to place them with their bellies facing upwards. This prevents the delicious internal innards and juices from escaping during the steaming process, thus preserving their flavor. In your steamer, add 800ml of water and 1/2 cup of sake. Cover with a lid and steam over high heat for 10-15 minutes. Crucially, do not open the lid while steaming! Opening it can release steam and juices, causing the crab to stick or lose flavor. After 10-15 minutes, reduce the heat slightly and let the crabs steam for another 2 minutes with the lid on. This steaming process ensures the crab is cooked through and incredibly tender.
