Chicken breast is a lean cut, rich in protein and low in fat, making it a healthy choice. This recipe offers a delicious way to enjoy chicken breast, often perceived as dry, by transforming it into a tender and flavorful steak with a delightful balsamic glaze.

- 1/2 medium Onion, thinly sliced
- 100g Cauliflower florets
- 150g Chicken breast, butterflied or sliced to desired thickness

Step 1
Begin by preparing the onion. Peel and thinly slice half a medium onion. This will add a natural sweetness as it cooks with the chicken and vegetables.

Next, prepare the cauliflower. Wash and cut the cauliflower into bite-sized florets. This ensures even cooking and makes it easy to eat.

Now, let’s prepare the chicken breast. For optimal cooking and flavor absorption, slice the chicken breast horizontally to about 1.5 to 2 cm thickness. This ‘butterflying’ technique helps the chicken cook more evenly and stay moist. You can also score the surface lightly with a knife to help the glaze penetrate better.

Heat a frying pan over medium heat. Add 3 tablespoons of olive oil and 1 tablespoon of butter. Allow the butter to melt completely, infusing the pan with a rich aroma.

Add the prepared cauliflower florets and sliced onions to the pan. Sauté them, stirring occasionally, until the onions become translucent and the cauliflower starts to soften and lightly brown. Season with a pinch of salt to enhance the vegetables’ natural sweetness and add a base flavor.

In the same pan (after pushing the vegetables to one side) or a separate small saucepan, combine 80ml of balsamic vinegar, 1 tablespoon of sugar, 1/2 tablespoon of dried oregano, and a pinch of black pepper. Bring to a gentle simmer over medium-low heat and cook for about 3 minutes, or until the sugar is dissolved and the glaze has slightly thickened. This process concentrates the flavors.

Make space in the pan for the chicken breast. Place the sliced chicken breast in the pan. Cook until it’s lightly browned on both sides, then pour the prepared balsamic glaze over the chicken. Continue to cook, stirring gently to coat the chicken with the glaze, for about 5 to 7 minutes, or until the chicken is cooked through and the sauce has reduced to a syrupy consistency. The chicken should be tender and glossy.
