Main Ingredients
  • Young Napa Cabbage 1/3 bunch (approx. 300g)

Seasonings & Broth
  • Doenjang (Korean soybean paste) 1 Tbsp
  • Gochujang (Korean chili paste) 1/3 Tbsp
  • Ground Perilla Seeds 3 Tbsp
  • Minced Garlic 1/3 Tbsp
  • Cube Broth (or Anchovy-Kelp Broth) 1 cube (500ml water)

Cooking Instructions

Step 1

First, prepare the young napa cabbage by removing any yellow or dirty outer leaves. Bring a pot of water to a boil with a pinch of coarse salt, and then blanch the prepared cabbage for about 1-2 minutes. This will slightly soften the leaves and enhance their vibrant green color.

Step 2

Immediately after blanching, quickly rinse the cabbage under cold running water to cool it down. Rinse it about 2-3 times thoroughly. This step removes any slight bitterness and helps maintain a crisp texture.

Step 3

Once the cabbage is drained well, cut it into bite-sized pieces, about 3-4 cm long. In a bowl, combine the cut cabbage with 1 Tbsp of doenjang, 1/3 Tbsp of gochujang, 3 Tbsp of ground perilla seeds, and 1/3 Tbsp of minced garlic. Gently massage the seasonings into the cabbage with your hands until well combined. (Tip: If you start with a whole bunch of young napa cabbage, 1/3 of it is usually the right amount for this recipe).

Step 4

In a pot, bring 500ml of water to a rolling boil with 1 cube of broth. Once the broth is boiling, add all the seasoned young napa cabbage. Continue to simmer over medium heat for another 5-7 minutes, or until the cabbage is tender and the soup comes to a boil again.
