Savory Chives and Egg Stir-fry
How to Make a Delicious Chives and Egg Stir-fry, A Chinese Scrambled Egg Dish (Zhuchi Jiaduan)
This dish is perfect for a simple breakfast or when you’re dieting. It’s nutritionally balanced because the chives supplement the vitamin C that eggs lack. The aroma of butter and sesame oil adds a wonderful depth of flavor to the dish.
Main Ingredients
- 4 large eggs
- 1 bunch fresh chives (about 30-40g)
- 3 Tbsp milk (helps make the eggs tender)
- 1 Tbsp cooking wine (like mirin, to remove egg odor)
- Pinch of salt
- 1 Tbsp cooking oil
- 1 Tbsp butter
Seasoning
- 2/3 Tbsp oyster sauce (adds umami)
- 1 Tbsp sesame oil (enhances nutty flavor!)
- 2/3 Tbsp oyster sauce (adds umami)
- 1 Tbsp sesame oil (enhances nutty flavor!)
Cooking Instructions
Step 1
First, wash the chives thoroughly, drain any excess water, and then cut them into approximately 3-4 cm lengths for easy eating. Cutting them too long can make stir-frying a bit awkward.
Step 2
In a large bowl, crack the 4 eggs. Add 3 tablespoons of milk for a tender texture and 1 tablespoon of cooking wine to eliminate any eggy smell. Whisk everything together until smooth and well combined, ensuring there are no lumps. Finally, add a tiny pinch of salt to season.
Step 3
Heat a non-stick pan over medium heat. Add 1 tablespoon of cooking oil and 1 tablespoon of butter, allowing them to melt and coat the pan evenly. Be careful not to let the butter burn.
Step 4
Once the butter has melted, pour the prepared egg mixture into the pan. Reduce the heat to medium-low. As you see the edges of the egg begin to set, gently stir and scramble it using a spatula or chopsticks. The key is to create soft, fluffy curds rather than overcooking it, which can make the eggs tough. Aim for a state where the eggs are about 70% cooked.
Step 5
When the eggs are about 70% cooked and still look moist, lower the heat to low. Add the chopped chives and 2/3 tablespoon of oyster sauce for a boost of flavor. Gently mix everything together, ensuring the chives are well incorporated with the eggs. Stir-fry briefly to keep the chives slightly crisp.
Step 6
As soon as all ingredients are combined, turn off the heat. Drizzle in 1 tablespoon of sesame oil for that final touch of nutty aroma and mix gently one last time. Your delicious Chives and Egg Stir-fry is now ready!
Step 7
Serve it over warm rice or enjoy it as a standalone side dish. Enjoy a healthy and delicious meal with this nutritious Chives and Egg Stir-fry!
