Ingredients
  • 5 cups soaked seaweed (generous amount)
  • 2 cups beef (for soup, generous amount)
  • 1.5 Tbsp minced garlic
  • 3 Tbsp soy sauce for soup (Guk-ganjang)
  • 1.5 Tbsp fish sauce (Kkanari aekjeot)
  • 0.5 Tbsp salt

Cooking Instructions

Step 1

Prepare the seaweed. The amount that fits comfortably in your hand is enough for about 4 servings, so feel free to adjust the quantity as needed.

Step 2

After soaking the seaweed in plenty of water, rinse it thoroughly several times and drain. Place the drained seaweed in a colander. **First Secret Key Point!** Knead the seaweed vigorously by hand, as if you’re trying to mash it. (Don’t worry, it won’t actually turn to mush!) This step is crucial for achieving a wonderfully milky and rich broth, regardless of the type of seaweed used.

Step 3

Heat 1.5 Tbsp of sesame oil in a deep pot over high heat. **Second Secret Key Point!** Add the prepared seaweed, beef, minced garlic, soy sauce for soup, and fish sauce. Stir-fry (‘bakkok’) intensely until the ingredients are almost scorched. If the liquid evaporates too quickly and it seems like it might burn, add a little water at a time while continuing to stir-fry vigorously for at least 3 minutes. After stir-frying, pour in 2.5 liters of water.

Step 4

Bring the soup to a rolling boil over high heat.

Reduce the heat to medium-high, cover the pot, and let it simmer continuously for at least 10 minutes. This allows the flavors to meld and deepen.

Step 6

After simmering for over 10 minutes, adjust the final seasoning. Add an additional 1 Tbsp of soy sauce for soup, half a tablespoon of fish sauce, and half a tablespoon of salt. Simmer for another 3 to 5 minutes to complete the soup.
