Cooking Instructions
Step 1
1. Prepare all your ingredients beforehand. Wash and chop them as needed. Having everything ready will make the cooking process much smoother.
Step 2
2. Fill a large pot with water, add about 1 teaspoon of salt, and a splash of olive oil. Bring the water to a rolling boil. The olive oil helps prevent the pasta from sticking together.
Step 3
3. Add the fusilli pasta to the boiling water and cook for 8-9 minutes, or according to package directions, until al dente. Stir occasionally to prevent sticking.
Step 4
4. Soak the salad greens in cold water. This helps them stay crisp and fresh. Once ready to use, drain them thoroughly.
Step 5
5. Mince the garlic finely or crush it with the back of a knife to release its flavor. Minced garlic will infuse the butter with a richer aroma.
Step 6
6. In a separate pan, melt the butter over low heat. Once melted, add the minced garlic and gently cook to create a fragrant garlic butter, being careful not to burn the garlic.
Step 7
7. Cut the scallops into bite-sized pieces. Place the prepared scallops and shrimp in a zip-top bag or directly into a pot of boiling water. Cook for 10-15 minutes until they are tender and fully cooked through.
Step 8
8. Peel and thinly slice the onion into fine julienne strips. Soak the sliced onion in cold water for a few minutes to mellow its sharpness and enhance its crispness. Drain well before using.
Step 9
9. Once the pasta is cooked, drain it in a colander and immediately transfer it to a mixing bowl. Drizzle with about 1 tablespoon of olive oil while it’s still warm to prevent the strands from clumping together.
Step 10
10. Add the drained salad greens and the well-drained julienned onion to the mixing bowl with the fusilli pasta. The colorful mix of vegetables and pasta looks very appealing.
Step 11
11. Remove the cooked scallops and shrimp from the garlic butter and add them to the mixing bowl. The warm seafood will add a lovely flavor to the pasta and vegetables.
Step 12
12. Now, let’s make the refreshing special sauce! In a small bowl, whisk together 3 Tbsp olive oil, 2 Tbsp soy sauce, 1/2 Tbsp vinegar, 2 Tbsp sugar, 1 Tbsp minced garlic, and 1/2 Tbsp lemon juice. For an extra touch of flavor, you can add a grind of fresh black pepper.
Step 13
13. Pour the prepared sauce over the ingredients in the mixing bowl. Gently toss everything together until well combined and coated with the dressing. Transfer the cold pasta to a serving plate and sprinkle with Parmesan cheese, if desired. Your delicious Scallop Shrimp Cold Pasta is ready to be enjoyed!
