Here’s a simple and refreshing Kongnamul-guk (bean sprout soup) that you can easily make without any broth. The secret to its clean and delicious flavor lies in seasoning it with salted shrimp (saeujeot). This recipe is quick, easy, and yields a wonderfully refreshing soup perfect for any occasion.
Ingredients
- 1 handful of bean sprouts (approx. 100g)
- 3 cups of water (approx. 600ml)
- 0.5 Tbsp minced salted shrimp (saeujeot)
- A little chopped green onion
- A little salt or soy sauce (to taste)
Cooking Instructions
Step 1
First, prepare 1 handful (about 100g) of bean sprouts. Rinse the bean sprouts thoroughly under cold running water. If you have a little extra time, trimming off the root ends can lead to an even cleaner-tasting soup. Using fresh, crisp bean sprouts will make a big difference in the final dish!

Next, prepare the key flavoring ingredients. Finely mince the salted shrimp (saeujeot) using a knife or a small food processor; the finer it’s minced, the less likely the soup will become cloudy. Chop the green onion and set aside. Using both the white and green parts of the scallion will add more depth of flavor.

In a pot, combine the rinsed bean sprouts and 3 cups (about 600ml) of water. Now, here’s a crucial tip for preventing the bean sprouts from tasting ‘fishy’: either cook the soup with the lid completely off, or if you choose to cover it, do not lift the lid until the bean sprouts are fully cooked. This steaming method locks in the flavor and prevents any unpleasant odors.

Once the bean sprouts are tender and a savory aroma fills the air, add the minced salted shrimp (0.5 Tbsp) and the chopped green onion to the pot. After adding the salted shrimp, taste the broth.
