Baek Jong-won’s Yeolmu Mul-guksu: A Super Simple Cold Noodle Dish to Beat the Heat!
My mom made delicious yeolmu kimchi, so I decided to make a super simple cold noodle dish with it! It’s the perfect menu item to enjoy on a sweltering hot day. Since the yeolmu kimchi itself provides most of the flavor base, you can make incredibly tasty cold noodles without any complex steps. The combination of the hearty yeolmu kimchi and the refreshing broth is sure to chase away the heat. Adding plenty of ice cubes makes it even more invigorating!
Main Ingredients
- 1 serving Somen noodles
- 1 cup Yeolmu Kimchi, cut into bite-sized pieces
- 2 cups store-bought Naengmyeon broth
- 1 hard-boiled egg, halved
Broth Seasoning Ingredients
- 1/2 Tbsp sugar
- 1 Tbsp vinegar
- 1/2 Tbsp sesame seeds
Seasoning Paste Ingredients
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (Korean soy sauce)
- 1/2 Tbsp sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
- 1/2 Tbsp sugar
- 1 Tbsp vinegar
- 1/2 Tbsp sesame seeds
Seasoning Paste Ingredients
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (Korean soy sauce)
- 1/2 Tbsp sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
Cooking Instructions
Step 1
First, prepare the yeolmu kimchi solids. Cut the kimchi stems into bite-sized pieces, about 2-3 cm long. About 1 cup of these cut pieces is suitable for one serving. This ensures you get a good amount of kimchi with each bite of noodles.

Now, let’s make the refreshing broth. Pour 2 cups of store-bought naengmyeon broth and 1 cup of yeolmu kimchi brine into a bowl. Add 1/2 tablespoon of sugar and 1 tablespoon of vinegar. Stir well until the sugar is completely dissolved. You can adjust the amount of yeolmu kimchi brine depending on the saltiness of your store-bought broth for the best flavor.
Step 3
Let’s make Chef Baek Jong-won’s special seasoning paste! In a separate small bowl, combine 1 tablespoon of gochujang, 1 tablespoon of jin ganjang, 1/2 tablespoon of sugar, 1 tablespoon of gochugaru, 1 tablespoon of sesame oil, and 1/2 tablespoon of sesame seeds. Mix everything thoroughly until smooth and well combined. Adding this paste to your noodles will significantly enhance the flavor.
Step 4
Cook the somen noodles to perfection. Bring a generous pot of water to a rolling boil. Add the somen noodles and stir gently with chopsticks to prevent them from sticking together. Cook until they are perfectly chewy. Once cooked, immediately transfer the noodles to cold water and rinse them by rubbing them gently. This process removes excess starch, resulting in a clearer broth and springier noodles. Drain the rinsed noodles thoroughly in a colander.

Now it’s time to assemble your beautiful bowl of noodles. Place the drained somen noodles into your serving bowl. Pour a generous amount of the prepared cold broth over the noodles. Artfully arrange the prepared yeolmu kimchi pieces on top. Add about 1/2 to 1 tablespoon of the seasoning paste. Finally, garnish with the halved hard-boiled egg for a visually appealing finish. Your delicious Yeolmu Mul-guksu is ready!
