Main Ingredients
  • 2 servings brown rice
  • 4 eggs
  • 1 block tofu (300g)
  • 2 carrots (small)
  • 2 strips pickled radish (danmuji)
  • 2 sheets of seaweed (gimbap nori)

Cooking Instructions

Step 1

Drain the tofu thoroughly using paper towels or a kitchen cloth. Cut it into 4 equal pieces, then lightly sprinkle with salt and pepper for seasoning. This helps remove any unwanted tofu smell and infuses flavor.

Step 2

Wash and peel the carrots. Using a knife or a mandoline slicer, julienne them into thin strips. Thinly julienned carrots will provide a pleasant texture and make the gimbap look neat when rolled.

Step 3

In separate bowls, whisk 2 eggs each. Lightly grease a preheated pan over low heat and cook thin egg omelets (jidan). Cooking them thinly prevents the gimbap from becoming too bulky and ensures a soft texture. Once cooked, slice the omelets into bite-sized pieces.

Step 4

In the same pan used for the egg omelets, add a little more oil. Stir-fry the julienned carrots, seasoning lightly with salt. Sauté until the carrots are slightly tender but still retain some crispness. This enhances their natural sweetness.

Step 5

Add a little oil to the pan and place the seasoned tofu pieces. Pan-fry them over medium-low heat until all sides are golden brown and slightly crispy. This gives the tofu a lovely texture.

Step 6

Once the tofu is browned, reduce the heat to low. Add 1 Tbsp of soy sauce and 1 Tbsp of allulose, and simmer gently until the sauce coats the tofu evenly. Allulose is used as a sugar substitute to reduce calories while providing a mild sweetness.

Step 7

To the warm brown rice, add 1 Tbsp of sesame oil and 1 Tbsp of sesame seeds. Season with a tiny pinch of salt and gently mix, being careful not to mash the rice grains. Ensure the rice isn’t too moist, as this can cause the gimbap to break.

Step 8

Lay a sheet of seaweed (gimbap nori) on a bamboo rolling mat. Spread a thin layer of the seasoned brown rice evenly over the seaweed. Arrange the sliced egg omelets, stir-fried carrots, simmered tofu, and pickled radish in a line on top of the rice. Carefully roll the gimbap tightly using the mat. Moisten the edge of the seaweed with a little water to seal it securely.

Step 9
