Main Ingredients
- 200g pasta (spaghetti or your favorite)
- 1 Tbsp coarse salt (for boiling pasta)
- 8 Tbsp kimchi juice
- A pinch of black sesame seeds or toasted sesame seeds (for garnish)
Sauce & Other Ingredients
- 1 Tbsp extra virgin olive oil
- 8 Tbsp finely chopped well-fermented kimchi
- 100g minced pork or ground pork
- 2 cups (400ml) milk
- 1/2 cup (100ml) heavy cream
- 2 Tbsp white wine
- Pinch of black pepper
- Salt to taste (for seasoning)
- 1 Tbsp extra virgin olive oil
- 8 Tbsp finely chopped well-fermented kimchi
- 100g minced pork or ground pork
- 2 cups (400ml) milk
- 1/2 cup (100ml) heavy cream
- 2 Tbsp white wine
- Pinch of black pepper
- Salt to taste (for seasoning)
Cooking Instructions
Step 1
Bring a large pot of water to a rolling boil. Add 1 Tbsp of coarse salt and 200g of pasta. Cook according to package directions, but aim for al dente by cooking for 1-2 minutes less than the suggested time (usually around 10 minutes). Crucially, reserve about 1 cup of the starchy pasta water before draining. This water is gold for achieving the perfect sauce consistency!
Step 2
While the pasta is cooking, heat 1 Tbsp of olive oil in a pan over medium heat. Add the 8 Tbsp of finely chopped, well-fermented kimchi. Sauté the kimchi until its sharp tang mellows and a pleasant sweetness emerges. The key is to cook it gently over medium-low heat to prevent burning.
Step 3
Once the kimchi is sautéed, add the 100g of minced pork. Break up any clumps and stir-fry until the pork is no longer pink and is cooked through. Ensure the pork is evenly browned.
Step 4
When the pork is about halfway cooked, pour in the 8 Tbsp of kimchi juice, 2 cups of milk, 1/2 cup of heavy cream, and 2 Tbsp of white wine. The white wine helps to eliminate any gamey odors and adds a layer of flavor. Season with a pinch of black pepper and a little salt. Stir everything together and bring to a simmer over medium heat. The sauce will start to thicken.
Step 5
Once the sauce is simmering beautifully, drain the cooked pasta (reserving the water!) and add it directly to the pan with the sauce. Toss the pasta and sauce together for 1-2 minutes, allowing the pasta to absorb the flavors. If the sauce seems too thick, gradually add some of the reserved pasta water until you reach your desired consistency.
Step 6
When the sauce and pasta are perfectly combined and the sauce has reached a luscious consistency, turn off the heat. Transfer the pasta to a warm serving plate.
