Cooking Instructions

Step 1

Let’s start by talking about seaweed. Known as the ‘vegetable of the sea,’ seaweed is rich in calcium, making it excellent for strengthening bones. It’s particularly high in iodine, which is beneficial for postpartum recovery. When choosing seaweed, look for pieces that are deep green, glossy, elastic, and thick. It’s a low-calorie, low-fat food packed with dietary fiber, promoting a feeling of fullness and aiding digestion to prevent constipation.

Step 2

For today’s soup, I’ve chosen beef brisket, which is tender and has less blood. I’m using leftover cut seaweed from a previous dish. To save time, instead of making broth from scratch, I’ll be using two concentrated broth cubes.

Soak the dried, cut seaweed in cold water for about 10-20 minutes. Avoid soaking for too long, as it can diminish the seaweed’s natural flavor. After about 10 minutes, gently rub and rinse the seaweed thoroughly. I like a lot of ingredients in my soup, so I’m using 20g of seaweed. For the beef, cut it into bite-sized pieces and pat dry with paper towels to remove any excess blood.

Rinse the soaked seaweed, squeeze out the excess water, and set it aside. Washing away the slimy coating on the seaweed is crucial for a clean and delicious broth. The beef has had its blood removed, and we’ll be using broth cubes, so no separate broth preparation is needed.

Step 5

Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the beef (blood removed) and stir-fry. Add 1 tablespoon of minced garlic to enhance the aroma. The savory garlic scent will add depth to the flavor.

Once the beef is partially cooked, add the soaked seaweed and continue to stir-fry. Pour in 2 tablespoons of Korean soy sauce for soup and stir-fry until the ingredients are seasoned and lightly toasted, being careful not to burn them. This sautéing step significantly deepens the ingredients’ umami.

Step 7

After stir-frying the beef and seaweed, add 1200ml of water and the two concentrated broth cubes. The cubes will dissolve, infusing the soup with a rich broth flavor.

Step 8

Once the soup comes to a boil, reduce the heat to medium-low and simmer for about 15-20 minutes, or until the beef and seaweed are tender. Check the tenderness of the ingredients. Taste the soup and if it needs more flavor, add 1 tablespoon of fish sauce to enhance the umami and adjust the seasoning perfectly. Fish sauce adds a different kind of depth compared to soy sauce.
