Ingredients
  • 1/6 Carrot, finely minced
  • 1/4 Onion, finely minced
  • A small handful of Mung Bean Sprouts, roughly chopped (optional)
  • 3 Fresh Eggs
  • 1 Tbsp Butter
  • Ketchup, to taste
  • 1/2 Tbsp Sugar
  • 2 slices Bread

Cooking Instructions

Step 1

In a bowl, crack the 3 fresh eggs and whisk them thoroughly with a fork or whisk until well combined. Add the finely minced carrot, onion, and the roughly chopped mung bean sprouts to the egg mixture. Stir everything together until the vegetables are evenly distributed throughout the egg batter. This will create a flavorful and colorful omelet.

Step 2

Heat a lightly oiled frying pan over medium-low heat. Pour the vegetable-egg mixture into the pan, spreading it out evenly to form a large, thin omelet, similar to how you’d make a Korean ‘Jidan’. Cook until one side is set, then carefully flip it over using a spatula to cook the other side. Once cooked, use the spatula to cut the omelet into 4 equal portions. This makes them easy to place on the toast and stack.

Step 3

Using the same pan or a clean one, melt 1 tablespoon of butter over medium-low heat, ensuring it coats the entire surface of the pan evenly. The butter will add a wonderful richness and help toast the bread to perfection.

Step 4

Place the 2 slices of bread into the melted butter. Grill the bread slowly, flipping occasionally, until both sides are golden brown and toasted to a delightful crispness. This creates the perfect base for our toast.

On one slice of the toasted bread, place a generous portion of the vegetable omelet pieces. Drizzle your desired amount of ketchup over the omelet, followed by a sprinkle of 1/2 tablespoon of sugar.
