Bibimbap is a beloved dish that’s both light on the stomach and incredibly satisfying. This recipe will show you how to create a delicious and nourishing bowl at home, perfect for a comforting meal.

Begin by preparing your vegetables. Wash and then julienne or thinly slice the carrots, zucchini, and onion. Slice the king oyster mushroom as well. For the cucumber, cut it in half lengthwise and then thinly slice it on an angle.

Heat a frying pan over medium-high heat and add a generous amount of cooking oil. Add the prepared vegetables (carrots, zucchini, onion, mushrooms) and stir-fry until they begin to soften. Reduce the heat to medium and continue to cook. Once the vegetables are tender, season lightly with black garlic salt. You can also use other seasoned salts or just a pinch of regular salt.

Next, let’s prepare and cook the beef bulgogi. In a bowl, combine the marinated beef bulgogi with 1 Tbsp sugar, 1 Tbsp Miryang (or cooking wine), and 1 Tbsp soy sauce. Mix well to coat the meat. Let it marinate for a few minutes. Heat a lightly oiled pan over medium heat and cook the marinated beef until it’s fully cooked. Add a little minced garlic towards the end for extra flavor. Once cooked, cut the beef into bite-sized pieces if they aren’t already.

Prepare the cucumber by slicing it thinly on an angle. For an extra crisp texture, you can briefly soak the cucumber slices in cold water and then drain them well before serving.
