Quick 2-Minute Tomato Soup

2-Minute Microwave Tomato Soup: Healthy and Easy for Dieters!

Here’s a simple yet delicious tomato soup recipe I often make! It’s low in calories and rich in nutrients, perfect for those on a diet. I’ve transformed healthy tomatoes into a delightful soup. The subtle sweetness from the tomatoes and the rich aroma of olive oil create a wonderfully sophisticated flavor. Best of all, it only takes 2 minutes to make! It’s a hearty and satisfying option for a busy morning instead of rice. Highly recommended for anyone seeking a healthy diet.

  • Ingredient Category : Vegetables
  • Occasion : Diet / Healthy
  • Cooking : Boil / Simmer
  • Servings : 1 serving
  • Cooking Time : Within 5 minutes
  • Difficulty : Anyone

Main Ingredients
  • 3 tomatoes
  • 1/4 onion
  • A pinch of dried basil

Seasoning & Others
  • 1 tsp minced garlic
  • 1-2 Tbsp olive oil
  • A pinch of salt

Cooking Instructions

Step 1

Score the bottom of each tomato with a cross (‘X’) and blanch them in boiling water for a moment to easily peel off the skin. Slice the peeled tomatoes into about 0.5-1 cm thick rounds, then cut them in half again to make them bite-sized. Finely mince the onion. (Cool Cat’s Tip: I prefer to remove the skin for a smoother texture, but you can leave it on if you find it too much work.)

Step 2

Place the prepared tomatoes and minced onion into a microwave-safe bowl. Add the minced garlic, dried basil, salt, and olive oil. Mix everything together evenly.

Step 3

Cover the bowl with plastic wrap and microwave for about 2 to 2 minutes and 30 seconds. The tomatoes will soften and release their juices, creating a light broth that gives it a soup-like consistency. (Tip: For a completely smooth, liquid soup without chunks, microwave for about 5 minutes.)

Step 4

Pour the finished tomato soup into a serving bowl. A final drizzle of olive oil enhances the flavor, and a garnish of baby greens adds a beautiful touch. (Serving Suggestions: For a perfect diet meal, serve with two boiled eggs. If you’re not dieting, a sprinkle of cheese makes it even more delicious! It’s also wonderful to dip crusty bread into the broth.)
