Here’s a simple yet delicious tomato soup recipe I often make! It’s low in calories and rich in nutrients, perfect for those on a diet. I’ve transformed healthy tomatoes into a delightful soup. - 3 tomatoes
- 1/4 onion

Cooking Instructions
Step 1
Score the bottom of each tomato with a cross (‘X’) and blanch them in boiling water for a moment to easily peel off the skin. Slice the peeled tomatoes into about 0.5-1 cm thick rounds, then cut them in half again to make them bite-sized. Finely mince the onion. (Cool Cat’s Tip: I prefer to remove the skin for a smoother texture, but you can leave it on if you find it too much work.)
Step 2
Place the prepared tomatoes and minced onion into a microwave-safe bowl. Add the minced garlic, dried basil, salt, and olive oil. Mix everything together evenly.
Step 3
Cover the bowl with plastic wrap and microwave for about 2 to 2 minutes and 30 seconds. The tomatoes will soften and release their juices, creating a light broth that gives it a soup-like consistency. (Tip: For a completely smooth, liquid soup without chunks, microwave for about 5 minutes.)
Step 4
Pour the finished tomato soup into a serving bowl. A final drizzle of olive oil enhances the flavor, and a garnish of baby greens adds a beautiful touch.
