  • Green onion, a small amount
  • Eggs, 4-5
  • Salt, 2 pinches (for egg wash)
  • Black pepper, a pinch (for seasoning beef)

Cooking Instructions

Step 1

Prepare the Aromatic Egg Wash: First, crack 4-5 eggs into a bowl. Add 2 pinches of salt. Whisk vigorously until the yolks and whites are completely blended and you have a smooth, light egg mixture. Preparing the egg wash in advance ensures it adheres beautifully to the beef slices later on.

Step 2

Tend to the Fresh Green Onion: Wash the green onions thoroughly under running water. It’s helpful to make a small slit down the white part of the green onion. This will help it unfurl nicely later, making it look more appealing and distribute flavor better when placed on the Yukjeon.

Step 3

Season the Beef for Jeon: Carefully separate the beef slices (intended for Jeon, such as top round or eye of round) one by one with a knife, after a slight thaw if frozen. Lightly sprinkle 1-2 pinches of salt on each side of the beef slices. It’s important not to oversalt; a mild seasoning is key. Finally, sprinkle black pepper evenly over the beef to enhance the flavor and reduce any gamey notes.

Step 4

Coat the Beef: Now it’s time to prepare the Yukjeon for cooking! The crucial tip is to cook the beef quickly before it thaws too much and becomes too soft. First, lightly coat each beef slice with a thin, even layer of flour, ensuring there are no clumps. Avoid using too much flour, as it can make the Jeon taste dry. After dusting with flour, dip the beef into the prepared egg wash, ensuring it’s fully coated.

Step 5

Fry the Delicious Yukjeon: Preheat a frying pan over medium heat and add a generous amount of cooking oil. Place the flour- and egg-coated beef slices onto the hot pan. Arrange the prepared green onions neatly on top of the beef. Cook quickly for about 1-2 minutes per side, until a beautiful golden-brown color develops.
