Crispy and Sweet-and-Sour Cucumber and Chive Salad
Super Simple Side Dish Recipe: Cucumber and Chive Salad
As the weather gets warmer, I crave refreshing, tangy, and sweet dishes, so I made this. It’s a perfect light side dish!
Main Ingredients
- 1 cucumber
- 1 bunch chives (about 50g)
- 1/2 onion

Step 1
First, wash the cucumber thoroughly and pat it dry. Slice it thinly into half-moon shapes. Place the sliced cucumber in a bowl and sprinkle with about 1/2 Tbsp of salt. Let it sit for 10 minutes to salt cure. This process makes the cucumber crispier and removes excess water for a better texture.
Step 2
While the cucumber is salting, wash the chives, trim off any tough ends, and cut them into 3-4 cm lengths. Peel the onion and slice it thinly into half-moons. Gently squeeze out any excess water from the salted cucumber before adding it.
Step 3
Combine the salted cucumber (lightly squeezed), chopped chives, and sliced onion in a mixing bowl. Add all the seasoning ingredients: 2 Tbsp gochugaru, 1 Tbsp sugar, 0.5 Tbsp vinegar, 0.5 Tbsp soy sauce, and 1 tsp sesame oil.
Step 4
Wearing disposable gloves or using chopsticks, gently mix all the ingredients and seasonings together. Be careful not to mash the cucumber and chives; the goal is to combine them lightly. Once everything is evenly coated, your delicious cucumber and chive salad is ready to serve!
