How to Make Delicious Burdock Root Inari Sushi Rolls
Don’t let leftover pre-cooked burdock root for kimbap go to waste! Transform it into simple yet flavorful burdock root inari sushi rolls. The sweetness of the fried tofu pouches, the savory-sweetness of the burdock, and the nutty flavor of the rice combine to create a dish loved by everyone, from kids’ snacks to a light meal. Main Ingredients
- 2 bowls of warm cooked rice
- 10 square pieces of fried tofu pouches (for sushi)
- 1/3 carrot (about 30g)
- 4 strips of pre-cooked burdock root for kimbap (about 50g)
- 1 tsp toasted sesame seeds
- 1 tsp black sesame seeds
- Pinch of salt (for seasoning rice)
- 1 Tbsp cooking oil (for stir-frying carrots)
Sushi Vinegar (Rice Seasoning)
- 1 Tbsp rice vinegar
- 1 tsp sugar
- Pinch of salt
- 1 Tbsp rice vinegar
- 1 tsp sugar

Cooking Instructions
Step 1
First, wash and peel the carrot, then finely mince it. Heat a pan over medium-low heat and add 1 Tbsp of cooking oil. Add the minced carrot and stir-fry for about 2-3 minutes until it softens. This process enhances the carrot’s natural sweetness and softens its texture.
Step 2
When the carrot begins to turn translucent, finely chop the pre-cooked burdock root strips for kimbap into small pieces (less than 1cm). Add them to the pan with the carrots and stir-fry together for another 1-2 minutes. This allows the delicious seasoning of the burdock to meld with the carrots.
Step 3
Finally, add 1 tsp of toasted sesame seeds for a nutty flavor and 1 tsp of black sesame seeds for color. Stir-fry for about 30 seconds until all ingredients are well combined. Transfer the stir-fried mixture to a separate bowl to cool slightly.
Step 4
Place 2 bowls of warm cooked rice into a large bowl. Add the sushi vinegar ingredients: 1 Tbsp rice vinegar, 1 tsp sugar, and a pinch of salt. Using a spatula or spoon, gently mix the rice to create the sushi seasoning without mashing the grains. Seasoning the rice while it’s hot helps the flavors absorb better.
Step 5
Add the stir-fried carrot and burdock mixture to the seasoned rice. Gently fold the ingredients into the rice until evenly distributed. Be careful not to mash the rice grains while mixing.
Step 6
Final step! Make a small cut along the edge of each square fried tofu pouch, or cut them diagonally in half. (Both methods work). You can briefly blanch the tofu pouches in boiling water to remove excess oil for a cleaner taste. Carefully stuff the prepared rice mixture into each tofu pouch, pressing gently. Your delicious burdock root inari sushi rolls are now complete! For an extra touch, serve with soy sauce or wasabi.
