Cooking Instructions
Step 1
Begin by thoroughly rinsing the whole chicken feet under cold running water to remove any dirt or impurities from the surface. Ensuring the chicken feet are clean is a crucial first step.
Step 2
Check the chicken feet for any sharp claws. If present, carefully trim them off with kitchen scissors or a knife. This makes them easier and safer to eat, especially for children or the elderly.
Step 3
Place the cleaned 12 chicken feet in a pot with enough water to cover them. Add 2 tablespoons of rice wine (mirin or cheongju) to help eliminate any gamey odor and to enhance the flavor. Boil them until tender.
Step 4
While the chicken feet are boiling, prepare the delicious sauce. In a bowl, combine 2 Tbsp gochujang, 1 Tbsp minced garlic, 2 Tbsp soy sauce, 2 Tbsp gochugaru, 1 Tbsp maesilcheong (or corn syrup), 1/2 Tbsp sesame oil, 1 Tbsp oligo당 (or corn syrup), 1 Tbsp sugar, and a pinch of black pepper. Mix everything thoroughly until well combined and smooth.
Step 5
Once the chicken feet are tender and slightly softened (this usually takes about 10-15 minutes), drain them completely using a colander. Be careful not to overcook them, as they might become too mushy. Aim for a pleasant chewy texture.
Step 6
Transfer the drained, boiled chicken feet into the bowl with the prepared sauce. Use your hands to gently mix and coat each chicken foot evenly with the sauce. Let the chicken feet marinate in the sauce for at least 20 minutes to allow the flavors to meld beautifully.
Step 7
Heat a pan over medium-low heat. Add the marinated chicken feet to the pan. Stir occasionally to prevent burning, and let the sauce thicken and caramelize slightly onto the chicken feet. This process enhances the flavor and texture.
Step 8
Transfer the saucy chicken feet to a serving dish. Your delicious spicy and sweet chicken feet are now ready to be enjoyed! They are best served hot.
Step 9
Now, let’s make the perfect rice balls to accompany the chicken feet. Start by placing 1 serving of warm cooked rice into a medium-sized bowl.
Step 10
Add the finely diced pickled radish (danmuji) to the rice. The crunchy texture and tangy flavor of the danmuji will add a delightful contrast to the rice.
Step 11
Tear the roasted seaweed (kim) into small pieces with your hands and sprinkle them over the rice. The savory, toasty notes of the seaweed add another layer of flavor.
Step 12
Sprinkle 3 tablespoons of toasted sesame seeds over the rice. The nutty aroma of sesame seeds complements all the other ingredients perfectly.
Step 13
Finally, add 3 tablespoons of mayonnaise and 2 tablespoons of sesame oil to the rice. (If you have a squeeze bottle of mayonnaise, you can drizzle it artistically). Gently mix all the ingredients together using a spoon or spatula, then shape the mixture into small rice balls. Your delicious rice balls are ready to be paired with the chicken feet!
