How to Make a Hearty Cabbage and Chicken Soup at Home
A comforting and rich soup featuring tender cabbage and chicken breast, enhanced with the delightful creaminess of melted mozzarella cheese. Perfect for a light yet satisfying meal.
Soup Ingredients
- 150g Cabbage, finely chopped
- 100g Chicken Breast, cut into bite-sized pieces
- 20g Mozzarella Cheese, divided (set some aside for topping)
- 1 Tbsp Minced Garlic
- 1 Tbsp Chicken Stock
- 1 cup Water
- Pinch of Black Pepper, to taste
- 1 Tbsp Cooking Oil
Cooking Instructions
Step 1
Begin by preparing your ingredients. Wash the 150g of fresh cabbage and chop it finely. Cut the 100g of chicken breast into bite-sized pieces. Ensuring the cabbage is cut into manageable pieces will help it meld beautifully into the soup.
Step 2
Next, heat 1 tablespoon of cooking oil in a pot or pan over medium heat. Add 1 tablespoon of minced garlic and sauté until fragrant, being careful not to burn it. This step builds a foundational aromatic base for the soup.
Step 3
Once the garlic is aromatic, add the prepared chicken breast pieces. Stir-fry until the chicken is mostly cooked through and no longer pink. Searing the chicken beforehand helps to lock in its juices and improves its texture.
Step 4
When the chicken is about halfway done, add the chopped cabbage to the pot. Continue to sauté until the cabbage begins to wilt. As the cabbage cooks, it releases its natural sweetness, which adds depth to the soup’s flavor.
Step 5
Pour in 1 cup of water, then cover the pot and bring to a simmer over medium-low heat. Let the soup cook for about 5-7 minutes, or until the cabbage and chicken are tender. This simmering time allows the flavors to meld.
Step 6
Check if the vegetables and chicken are tender. Stir in 1 tablespoon of chicken stock for an added layer of savory flavor, and season with a pinch of black pepper. Adjust seasoning as needed to your preference.
Step 7
Finally, add most of the 20g of mozzarella cheese to the soup, reserving a small amount for garnish. Stir gently and continuously until the cheese is fully melted and incorporated, creating a creamy texture. Simmer for another 1-2 minutes, ensuring the cheese doesn’t clump.
Step 8
Ladle the warm cabbage and chicken soup into serving bowls. Sprinkle the reserved mozzarella cheese over the top for a final touch of cheesy goodness. Serve immediately and enjoy this comforting homemade soup.
