  • 2 medium potatoes
  • 2 slices of ham

Cooking Instructions

Step 1

Peel and wash the 2 medium potatoes thoroughly. Using the thinnest setting on your grater or mandoline, shred the potatoes into very fine strips. The thinner the shreds, the crispier your waffles will be!

Place the shredded potatoes in a bowl and sprinkle with 1/2 tsp of salt. Gently toss to combine and let them sit for about 5 minutes. This step draws out excess moisture, contributing to crispiness. While the potatoes are resting, thinly slice the 2 slices of ham into bite-sized pieces (about 1-2 cm wide).

Step 3

Drain the excess liquid from the salted potato shreds thoroughly. You can do this by pressing gently with your hands or by placing them in a sieve. Removing as much water as possible is key to achieving a crispy result.

Step 4

Add the sliced ham, a pinch of black pepper, and 1 Tbsp of pancake mix (or flour) to the drained potato shreds.

Step 5

Gently mix everything together until all the potato shreds are evenly coated with the pancake mix. Ensure a uniform coating for the best texture.

Preheat your waffle maker to medium heat. Lightly grease the waffle plates with a little cooking oil, spreading it evenly with a paper towel. Spoon the potato mixture onto the waffle maker, spreading it thinly and evenly.

Step 7

Cook over medium heat for about 3-5 minutes per side, or until the waffles are golden brown and crispy. The characteristic waffle pattern should be well-defined.

Step 8
