Peel and wash the 2 medium potatoes thoroughly. Using the thinnest setting on your grater or mandoline, shred the potatoes into very fine strips. The thinner the shreds, the crispier your waffles will be!

While the potatoes are resting, thinly slice the 2 slices of ham into bite-sized pieces (about 1-2 cm wide).
