Ingredients
  • 2 cups small dried anchovies
  • 2 Tbsp mayonnaise
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce
  • 2 Tbsp cooking wine (cheongju/mirin)
  • 1 Tbsp sugar
  • 1/2 Tbsp corn syrup (oligo-dang)
  • 1 Tbsp sesame oil
  • 2 Korean green chili peppers (cheongyang peppers)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 2 cups of small dried anchovies. Heat a dry pan over medium-low heat, and without adding any oil, stir-fry the anchovies for about 5 minutes until they become slightly crispy. This step helps remove any fishy smell and enhances their crispiness.

Step 2

Place the stir-fried anchovies in a fine-mesh sieve and gently shake them to remove any crumbs or fine dust. This will ensure a cleaner final dish. Set the prepared anchovies aside.

Step 3

Now, let’s make the sauce. Reheat the pan over medium-low heat. Add 2 tablespoons of mayonnaise and 1 tablespoon of minced garlic. Stir continuously for about 1 minute until fragrant, making sure not to burn the garlic, to create a flavorful garlic-infused oil.

Step 4

Add the pre-stir-fried anchovies to the pan with the fragrant garlic mayonnaise mixture. Stir-fry them together for about 1-2 minutes, ensuring the anchovies are evenly coated with the garlic mayonnaise sauce. This process will make the anchovies even more savory and crispy.

Once the anchovies are well combined with the garlic mayonnaise, add all the sauce ingredients. Mix 1 tablespoon of soy sauce, 2 tablespoons of cooking wine, 1 tablespoon of sugar, 1/2 tablespoon of corn syrup, and 1 tablespoon of sesame oil, then pour them into the pan.

Step 6

Reduce the heat to low to prevent the sauce from burning. Quickly stir everything together and simmer for 2-3 minutes until the sauce thickens and coats the anchovies evenly, giving them a glossy finish.

Step 7
