Delicious Fried Oysters Made Easily with Leftover Oysters

Cooking Instructions

Step 1

Carefully clean the oysters. Blanch them in boiling water for about 20 seconds. Immediately rinse them under cold water to stop the cooking and cool them down. While rinsing, thoroughly check and remove any shell fragments or impurities.

Prepare the batter for coating the oysters. Crack the eggs into a bowl and whisk them well. (Tip: Using more egg yolks can result in a richer flavor, but here we’ll use one whole egg for an even coating.)

Step 3

Lightly coat the cleaned oysters with buchim garu (or all-purpose flour). This helps to dry the surface of the oysters and allows the subsequent batter to adhere better. Ensure an even coating.

Dip the flour-coated oysters into the whisked egg. Make sure each oyster is fully covered with the egg wash. This acts as a binder for the breadcrumbs.

Now, coat the oysters with panko breadcrumbs. Roll the egg-coated oysters in the panko, pressing gently to ensure the breadcrumbs stick well. Pressing firmly helps create a crispier crust that stays on during frying.

Heat the frying oil in a pot or deep pan over medium heat. Once the oil is shimmering, reduce the heat to medium-low just before adding the oysters. This prevents the coating from burning before the inside is cooked.

Carefully place the breaded oysters into the hot oil, working in batches if necessary to avoid overcrowding. Fry them gently over medium-low heat until they are golden brown and crispy. Keep an eye on them to prevent burning, especially while you bread the remaining oysters.
