- 3 Tbsp Sugar
- 2 Tbsp Water
- 1 Tbsp Mirin (or rice wine)
- 1 Tbsp Soy sauce (Korean soup soy sauce)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame oil
- 1 Tbsp Corn syrup (or oligodang)
- Pinch of Toasted sesame seeds (for garnish)
- 3 Tbsp Cooking oil
- 1 Tbsp Minced garlic
- 3 Tbsp Sugar
- 2 Tbsp Water
- 1 Tbsp Mirin (or rice wine)
- 1 Tbsp Soy sauce (Korean soup soy sauce)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame oil
- 1 Tbsp Corn syrup (or oligodang)
- Pinch of Toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
First, place the anchovies in a sieve and shake gently to remove any dust or small broken pieces. This step ensures a cleaner texture when stir-fried.
Step 2
Heat a dry pan over low heat without any oil. Add the cleaned anchovies and stir-fry for about 2-3 minutes. This process is crucial for removing any fishy odor and achieving a crispy texture.
Step 3
After stir-frying, place the anchovies back into a fine sieve and shake again to remove any remaining small crumbs. This contributes to the overall neatness of the dish.
Step 4
In a small bowl, combine 3 Tbsp sugar, 2 Tbsp water, 1 Tbsp mirin, 1 Tbsp soy sauce, and 1 Tbsp gochujang. Whisk well until the gochujang is fully dissolved to create the anchovy stir-fry sauce. Make sure there are no lumps.
Step 5
Now, add 3 Tbsp of cooking oil to the pan and sauté 1 Tbsp of minced garlic over medium-low heat. Be careful not to burn the garlic; sauté until a gentle garlic aroma is released. This is the key to infusing flavor.
Step 6
Once the garlic starts to turn golden brown, add the prepared anchovies and stir-fry lightly for about 1 minute using the residual heat of the pan. This lightly coats the anchovies and adds a nutty flavor.
Step 7
Pour the pre-mixed gochujang sauce into the pan. Stir with a spatula to ensure the anchovies and sauce are evenly combined. Continue to stir-fry over medium heat for 2-3 minutes until the sauce clings to the anchovies.
Step 8
Turn off the heat. Stir in 1 Tbsp of sesame oil and 1 Tbsp of corn syrup for a glossy finish and subtle sweetness. Finally, sprinkle with toasted sesame seeds. Your mouth-watering stir-fried anchovies with gochujang are now complete! Serve generously over warm rice and enjoy.
