An incredibly simple Korean side dish that’s perfect for meal prep! Make a batch, and it’ll last you the whole week. This anchovy stir-fry is guaranteed to be delicious, featuring a delightful combination of savory anchovies, crunchy nuts, and tender peppers.
Main Ingredients
- 2 handfuls of small dried anchovies (about 80g)
- 6 Korean green chili peppers (about 50g)
- 1 pack of mixed nuts (about 50g)
Seasoning Ingredients
- 1/3 cup vegetable oil (about 60ml)
- 1 tsp minced garlic
- 1 tsp soy sauce
- 1 tsp oligosaccharide (or corn syrup)

- 1 tsp toasted sesame seeds

Cooking Instructions
Step 1
Heat 1/3 cup (about 60ml) of vegetable oil in a wide pan over medium heat. Allowing the pan to get sufficiently hot will enhance the flavor of the dish.
Step 2
Add the 6 washed Korean green chili peppers (or 10 if you prefer) to the pan and stir-fry for about 10 seconds until they slightly soften. Once the peppers are tender, add 1 tsp of minced garlic and 1 tsp of soy sauce, then stir-fry for another 10 seconds to release their aroma.
Step 3
Now, add the 2 handfuls of small dried anchovies (about 80g). Stir-fry over medium heat for 1-2 minutes, ensuring the anchovies are coated with oil. Be careful not to overcook them to the point where they become too hard.
Step 4
Add the 1 pack of mixed nuts (about 50g) and 1 tsp of toasted sesame seeds. Stir-fry quickly for about 10-20 seconds, being careful not to burn the nuts. Immediately turn off the heat. While the pan is still hot, add 1 tsp of oligosaccharide and 1 tsp of sesame oil, then gently toss everything together until well combined. (If you’re in a hurry, you can add all the seasonings to the pan at the end and stir-fry them together.)

Transfer the stir-fried anchovies and nuts to a wide plate or a sieve and let them cool completely. This cooling process is key to achieving a delightfully crispy and crunchy texture. Don’t skip this step for the best results!
