  • 1 bunch Green Onions (chopped)
  • 4 cloves Garlic (minced or thinly sliced)

  • 1 tsp Sugar
  • 2 Tbsp Soy Sauce
  • 3 Tbsp Oyster Sauce
  • 2 Eggs (optional, for topping)

Step 1

This recipe is perfect for a simple yet nutritious meal, ideal for busy days or when you’re dining alone. The combination of chewy squid and savory seasonings makes it a truly satisfying dish.

Thoroughly wash the fresh squids under running water. Remove the innards and quill. Slice them into bite-sized pieces, about 1-1.5 cm wide. Avoid slicing too thinly, as they will shrink when cooked.

Chop the green onions and mince or thinly slice the garlic. Heat 1-2 tablespoons of butter or cooking oil in a pan over medium heat. Add the chopped green onions and garlic, then stir-fry gently until fragrant, creating ‘scallion oil’. Be careful not to burn them; the key is to release their sweet aroma.

Step 4

Once the fragrant scallion oil is ready, add the sliced squid to the pan and stir-fry over high heat for 1-2 minutes until opaque. Cooking over high heat prevents excess moisture from releasing and helps maintain the squid’s signature chewy texture. Be careful not to overcook, as it can become tough.
