Recipe Info

  • Category : Soup / Broth
  • Ingredient Category : Vegetables
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 4 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • 900ml Anchovy-Kelp Broth (or water)
  • 2 small potatoes
  • 2 fresh eggs
  • 1/2 green onion (scallion)

Seasoning Ingredients

  • 1 Tbsp minced garlic
  • 1 Tbsp tuna extract (or fish sauce)
  • 1 Tbsp soup soy sauce
  • 1/3 Tbsp salt (or adjust to taste)
  • A pinch of black pepper

Cooking Instructions

Step 1

Prepare 900ml of anchovy-kelp broth. Add dried anchovies and kelp to cold water, bring to a boil, then simmer for 5 minutes over medium-low heat. Turn off the heat and let it steep for another 10 minutes for a deeper flavor. (If you’re short on time, you can use plain water.)

Step 1

Step 2

Peel the potatoes and wash them thoroughly. Cut them into bite-sized pieces, about 0.5 cm thick, either halved or diced, making them easy for children to eat. Thinly slice the green onion diagonally.

Step 2

Step 3

Lightly beat the 2 eggs in a bowl, mixing the yolks and whites together. Avoid over-beating the eggs to keep the soup clear.

Step 3

Step 4

Turn on the heat and add the sliced potatoes to the boiling broth. Cook for about 5-7 minutes, or until the potatoes become translucent.

Step 4

Step 5

Once the potatoes are almost cooked, season the soup by adding 1 Tbsp tuna extract, 1 Tbsp soup soy sauce, and 1 Tbsp minced garlic. Add the sliced green onion, 1/3 Tbsp salt, and a pinch of black pepper to complete the flavor. Adjust seasoning with salt or soup soy sauce as needed.

Step 5

Step 6

Check if the potatoes are tender. Then, slowly drizzle the beaten egg in a circular motion over the simmering soup. Do not stir the egg; let it cook gently. Once the egg is softly set, turn off the heat. This results in a clear and refreshing Potato Egg Soup! (The key to a clear soup is not stirring the egg!)
