Cooking Instructions
Step 1
Prepare 900ml of anchovy-kelp broth. Add dried anchovies and kelp to cold water, bring to a boil, then simmer for 5 minutes over medium-low heat. Turn off the heat and let it steep for another 10 minutes for a deeper flavor. (If you’re short on time, you can use plain water.)
Step 2
Peel the potatoes and wash them thoroughly. Cut them into bite-sized pieces, about 0.5 cm thick, either halved or diced, making them easy for children to eat. Thinly slice the green onion diagonally.

Lightly beat the 2 eggs in a bowl, mixing the yolks and whites together. Avoid over-beating the eggs to keep the soup clear.

Turn on the heat and add the sliced potatoes to the boiling broth. Cook for about 5-7 minutes, or until the potatoes become translucent.
