Special Bun Thit Nuong Sauce
- Fish sauce 3 Tbsp
- Pineapple juice (or mashed pineapple) 3 Tbsp
- Chili sauce 2 Tbsp
- Vinegar 1 Tbsp
- Sugar 1 Tbsp
- Lemon juice 1 Tbsp
- Fish sauce 3 Tbsp

Cooking Instructions
Step 1
Soak the dried rice vermicelli noodles in cold water for at least 30 minutes before cooking. (Soaking time may vary depending on noodle thickness.) Once soaked, place the noodles directly into boiling water and cook for about 3-4 minutes. Soaking the noodles first and cooking them near the end of your preparation will prevent them from becoming overly soft or mushy.
Step 2
Prepare the special sauce, which is the heart of Bun Thit Nuong. In a bowl, combine 3 Tbsp fish sauce, 3 Tbsp pineapple juice (or finely mashed pineapple), 2 Tbsp chili sauce, 1 Tbsp vinegar, 1 Tbsp sugar, and 1 Tbsp lemon juice. Whisk everything together until well combined. Taste the sauce and adjust the amount of vinegar or sugar according to your preference. If the sauce tastes too salty, you can add a little more pineapple juice to balance the flavor.
Step 3
Get your fresh vegetables ready. Wash any vegetables you have on hand, such as cabbage, lettuce, mustard greens, and cilantro, under running water. Chop them into bite-sized pieces. For the onion, thinly slice it and soak it in cold water for a few minutes to mellow its sharp flavor and add a refreshing crunch.
Step 4
Marinate the thinly sliced beef for bulgogi with 1 Tbsp mirin, a pinch of salt, and a pinch of black pepper. Heat a little oil in a pan over medium-high heat. Add the marinated beef and stir-fry until it’s almost cooked through. If the beef releases excess liquid during cooking, drain it off. Once the beef is nearly done, add 1 Tbsp soy sauce and 1 Tbsp of the prepared Bun Thit Nuong sauce. Stir-fry quickly to coat the beef and infuse it with flavor.
Step 5
Now it’s time to assemble your beautiful bowl! Start by placing a generous portion of the cooked rice vermicelli noodles at the bottom of your serving bowl. Arrange the fresh vegetables and the stir-fried beef attractively on top of the noodles. Finally, sprinkle the roasted chopped peanuts over everything for a delightful nutty texture.
Step 6
Pour the special Bun Thit Nuong sauce generously over the assembled ingredients. Mix everything together and enjoy your delicious meal! The combination of the tangy, sweet, and spicy sauce with the various fresh and savory components creates a wonderfully satisfying and flavorful dish.
