Ingredients
  • 1 bowl of warm rice (approx. 200g)
  • 100g pre-made chicken breast balls (or 100g raw chicken breast)
  • 6 crescent-shaped pickled radishes (danmuji)
  • 5 Tbsp seaweed flakes (gim)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, in a bowl of warm rice, add the finely chopped pickled radishes, savory seaweed flakes, toasted sesame seeds, and fragrant sesame oil. Gently mix with a spatula or your hands, being careful not to mash the rice grains. It’s important to thoroughly mix the seasonings so the sweet and sour flavor of the pickled radish is evenly distributed throughout the rice.

Step 2

Prepare the chicken breast balls. If you’re using pre-made frozen chicken breast balls, microwave them for about 2 minutes until heated through. If you’re using raw chicken breast, fill a pot with plenty of water, add 1 tablespoon of soju and half a tablespoon of salt, and boil for 15 minutes. Once boiled, let the chicken breast cool slightly, then dice it into small cubes for use. This method ensures the chicken breast is moist and not dry.

Step 3

Now it’s time to make the nest rice balls. Take a portion of the mixed rice and roll it into a ball. Then, using your thumb, gently press down into the center of the rice ball to create a small hollow. Place one chicken breast ball inside the hollow, and then carefully enclose the chicken breast ball with the rice, covering it completely. Finally, firmly press the outside of the rice ball to secure it, ensuring it doesn’t fall apart. Your cute nest rice balls are now complete!
