Ingredients

  • 400g fresh beetroot
  • 50ml vinegar
  • 50g sugar
  • 100ml water
  • 1 sprig of rosemary (optional)

Cooking Instructions

Step 1

Start by preparing your 400g of fresh beetroot. Wash the beetroots thoroughly and then use a mandoline slicer or a sharp knife to slice them as thinly as possible. Thin slices will absorb the pickling liquid better and result in a more tender texture. Aim for about 1-2mm thickness.

Step 1

Step 2

Now, let’s make the pickling brine that gives the ssammu its signature tangy and sweet flavor. In a saucepan, combine 50ml of vinegar, 50g of sugar, and 100ml of water. This balanced ratio is key to enhancing the beetroot’s natural taste!

Step 2

Step 3

Place the saucepan over medium-high heat and bring it to a boil, stirring constantly until the sugar is completely dissolved. Once the sugar has dissolved and the liquid is clear, immediately turn off the heat. Avoid boiling for too long, as this can diminish the vibrant aroma of the vinegar. Let the brine cool down slightly in the pot.

Step 3

Step 4

Prepare a clean container or glass jar. Arrange the thinly sliced beetroots neatly inside. For an added layer of fragrant complexity, add a sprig of rosemary. If rosemary isn’t available, feel free to omit it. Pour the slightly cooled pickling brine evenly over the beetroots and rosemary.

Step 4

Step 5

Securely close the lid of the container and refrigerate it. Allow the beetroot ssammu to pickle for at least 12 hours. This crucial resting period lets the flavors meld and the beetroots absorb the brine, ensuring a delicious outcome. After 12 hours, take out your crisp and refreshing beetroot ssammu and enjoy! It’s a fantastic addition to salads, wraps, kimbap, and many other dishes.
