Ingredients

- 50ml vinegar
- 50g sugar
- 100ml water

Start by preparing your 400g of fresh beetroot. Wash the beetroots thoroughly and then use a mandoline slicer or a sharp knife to slice them as thinly as possible. Thin slices will absorb the pickling liquid better and result in a more tender texture. Aim for about 1-2mm thickness.

Now, let’s make the pickling brine that gives the ssammu its signature tangy and sweet flavor. In a saucepan, combine 50ml of vinegar, 50g of sugar, and 100ml of water. This balanced ratio is key to enhancing the beetroot’s natural taste!

Place the saucepan over medium-high heat and bring it to a boil, stirring constantly until the sugar is completely dissolved. Once the sugar has dissolved and the liquid is clear, immediately turn off the heat. Avoid boiling for too long, as this can diminish the vibrant aroma of the vinegar. Let the brine cool down slightly in the pot.

Prepare a clean container or glass jar. Arrange the thinly sliced beetroots neatly inside. For an added layer of fragrant complexity, add a sprig of rosemary. If rosemary isn’t available, feel free to omit it. Pour the slightly cooled pickling brine evenly over the beetroots and rosemary.
