Main Ingredients
  • 1 piece of carrot (for testing oil temperature)
  • 1 potato (raw, about 150g)
  • 1 boiled potato (about 100g)
  • 1/4 onion (small)
  • 2-3 Tbsp potato soup broth or water
  • 1/4 apple (thinly sliced)
  • 1 stalk green onion (for garnish, optional)

Batter & Seasoning
  • 2 Tbsp potato starch
  • 1 Tbsp all-purpose flour
  • Ketchup (for dipping) as needed

Cooking Instructions

Step 1

Before coating, it’s crucial to test the frying oil temperature. Drop a small piece of carrot into the oil. If it bubbles gently and slowly rises, the temperature is just right. Fry this carrot piece and ensure it’s completely dry.

Step 2

Peel and finely mince the raw potato and onion. Mash the boiled potato until it’s smooth and lump-free using a fork or masher.

Step 3

In a bowl, combine the mashed boiled potato, minced raw potato, and onion. Add 2 Tbsp potato starch and 1 Tbsp flour, and mix well. If the mixture is too stiff, gradually add 1 Tbsp of potato soup broth or water at a time until it forms a cohesive dough. Be careful not to make it too sticky.

Step 4

Gently press a portion of the potato dough onto the thinly sliced apple pieces and the pre-fried carrot pieces. Ensure the dough adheres well. Then, lightly coat the dough-covered apple and carrot with flour to help the batter stick during frying.

Step 5

Increase the oil temperature to frying level (170-180°C or 340-350°F). Carefully place the dough-covered apple and carrot pieces into the hot oil, ensuring the dough side faces down first to crisp up. Fry them until golden brown. It’s best to fry over medium-low heat to ensure they cook through. After frying, you can drain excess oil by leaning them against the side of the wok for extra crispiness.

Step 6

Your unique, chewy, and crispy French fries are ready! Serve hot with ketchup for dipping. For an extra touch, you can garnish with the fried green onion pieces.
