I pondered what kind of dishes could be made with soy sheets instead of pasta, and decided to create a healthy lasagna. Let’s make a healthy dish together! This recipe offers a delightful twist on traditional lasagna, using tender tofu sheets for a lighter, yet satisfying meal.

  • 1 eggplant
  • 1 king oyster mushroom
  • 1 block of tofu sheets (approx. 300g)
  • 150g ground pork (from antibiotic-free pigs)
  • 2 free-range eggs
  • 3 ladles of homemade tomato sauce (approx. 300ml)
  • A good amount of string cheese
  • A pinch of rock salt or sea salt
  • A little olive oil

First, thoroughly wash the eggplant and king oyster mushroom. If possible, using calcium powder or baking soda for washing can ensure they are extra clean. Rinse them well and pat dry.

Gently rinse the tofu sheets, which will serve as the pasta layers, under running water and drain them. Rinsing makes them cleaner to use.

Slice the washed eggplant into round pieces, about 0.5 cm thick. It’s important to keep the thickness consistent as these will form the layers of your lasagna.

Cut the king oyster mushrooms in half lengthwise with a knife.

Chop the halved king oyster mushrooms into small, bite-sized pieces, about 0.5 cm thick. This size will give a pleasant texture when cooked and blend well into the lasagna.
