Tofu Sheet Lasagna
[Eco-Friendly Natural Cook] Making Delicious Tofu Sheet Lasagna
I pondered what kind of dishes could be made with soy sheets instead of pasta, and decided to create a healthy lasagna. Let’s make a healthy dish together! This recipe offers a delightful twist on traditional lasagna, using tender tofu sheets for a lighter, yet satisfying meal.
Main Ingredients
- 1 eggplant
- 1 king oyster mushroom
- 1 block of tofu sheets (approx. 300g)
- 150g ground pork (from antibiotic-free pigs)
- 2 free-range eggs
- 3 ladles of homemade tomato sauce (approx. 300ml)
- A good amount of string cheese
- A pinch of rock salt or sea salt
- A little olive oil
Cooking Instructions
Step 1
First, thoroughly wash the eggplant and king oyster mushroom. If possible, using calcium powder or baking soda for washing can ensure they are extra clean. Rinse them well and pat dry.
Step 2
Gently rinse the tofu sheets, which will serve as the pasta layers, under running water and drain them. Rinsing makes them cleaner to use.
Step 3
Slice the washed eggplant into round pieces, about 0.5 cm thick. It’s important to keep the thickness consistent as these will form the layers of your lasagna.
Step 4
Cut the king oyster mushrooms in half lengthwise with a knife.
Step 5
Chop the halved king oyster mushrooms into small, bite-sized pieces, about 0.5 cm thick. This size will give a pleasant texture when cooked and blend well into the lasagna.
Step 6
Place the sliced eggplant and chopped mushrooms in separate bowls or together, ready for the next steps.
Step 7
For the egg wash, crack 2 free-range eggs into a bowl. Carefully remove the chalazae (the white, stringy parts of the egg) for a smoother consistency.
Step 8
Add a tiny pinch of rock salt or sea salt to the beaten eggs to season lightly. Be careful not to over-salt. Whisk gently to create an egg wash. This mixture will help bind the layers together.
Step 9
Prepare 150g of ground pork. Using pork from antibiotic-free pigs ensures a healthier dish.
Step 10
Heat a frying pan over medium heat and add a little olive oil. Be cautious not to let the pan get too hot, as the pork can burn quickly.
Step 11
Add the ground pork to the pan and break it up with a spatula, stirring constantly as it cooks. Sauté until the pink color disappears and the pork is lightly browned.
Step 12
Here’s the heart of our Italian dish: the tomato sauce. Prepare 3 ladles (about 300ml) of your homemade tomato sauce. (The recipe for the sauce is detailed on the author’s homepage/blog.)
Step 13
Pour the prepared tomato sauce generously over the cooked pork. The sauce plays a crucial role in melding the flavors of the ingredients.
Step 14
Stir everything together and cook until the sauce thickens slightly and the flavors meld beautifully. The sauce will deepen in richness as it simmers.
Step 15
While the oven preheats, lightly grease your oven-safe dish with olive oil. This prevents the lasagna from sticking to the pan after baking.
Step 16
Arrange a layer of the sliced eggplant at the bottom of the prepared oven dish, making sure the slices don’t overlap too much. The eggplant will act as the pasta layer and add a tender texture.
Step 17
Pour the egg wash evenly over the eggplant layer. The egg wash will help bind the eggplant to the subsequent layers.
Step 18
Next, place a layer of the prepared tofu sheets neatly on top of the egg-washed eggplant. These tofu sheets will form a hearty base for your lasagna.
Step 19
Spread the cooked pork and tomato sauce mixture evenly over the tofu layer. The tangy and sweet sauce will enrich the overall flavor of the lasagna.
Step 20
Sprinkle the chopped king oyster mushrooms over the tomato sauce. The chewy mushrooms add an interesting textural contrast.
Step 21
Top with another layer of tofu sheets. Building up these layers will create a wonderfully substantial lasagna.
Step 22
Finally, generously sprinkle the string cheese over the top layer. Place the assembled lasagna in a preheated oven at 180°C (350°F) for about 20 minutes, or until the cheese is melted and golden brown. Adjust the baking time as needed based on your oven.
Step 23
Your delicious Tofu Sheet Lasagna is ready, baked to a golden perfection! It looks appetizing with the melted cheese and well-combined ingredients.
Step 24
Carefully remove the baked lasagna from the oven and transfer it to a serving dish. It’s best enjoyed warm right away. Enjoy your meal!
