- 1/3 Tbsp prepared mustard (for a zesty kick!)

Cooking Instructions
Step 1
Soak the glass noodles in cold water for at least 30 minutes before cooking. This ensures they become tender and chewy, leading to a more delicious result.
Step 2
In a small bowl, combine all the dressing ingredients: sugar, soy sauce, vinegar, sesame oil, prepared mustard, and sesame seeds. Whisk them together thoroughly with a whisk or spoon until well mixed to create your delicious special dressing. You can adjust the amount of mustard according to your preference.
Step 3
Once the glass noodles are soaked, cook them in boiling water for about 5 minutes. They are ready when they turn transparent and have a chewy texture. Drain them and quickly rinse under cold water to remove excess starch, then drain well. For the cocktail shrimp, blanch them in boiling water for just 30 seconds until they change color, then immediately remove and rinse under cold water. Overcooking can make them tough.
Step 4
Thinly slice the washed cucumber after halving it and removing the seeds. Also, core the bell pepper and slice it into thin strips of similar size. Sprinkle a little salt over the sliced cucumber and bell pepper and let them sit for about 5 minutes to draw out moisture. Gently pat them dry with a paper towel to maintain their crispiness.
Step 5
Lightly beat the eggs with a pinch of salt. Heat a non-stick pan over low heat and thinly cook the eggs into omelets. Let the cooked omelets cool slightly, then slice them into thin strips.
Step 6
Combine the prepared chewy glass noodles, crisp cucumber and bell pepper, blanched shrimp, and egg strips in a large bowl. Pour the prepared special dressing over them. Gently toss everything together until all ingredients are well coated with the dressing. Transfer the finished Glass Noodle Salad to a serving plate and garnish with fresh radish sprouts for an even more appealing presentation.
