However, the delicious outcome will be well worth the effort. Here’s a recipe for LA Galbi that’s perfect for special occasions or a family meal.

Marinade Ingredients (for Blender)
  • 1 handful of Radish (approx. 100g)
  • 1 Onion
  • 1 whole Garlic head
  • 4 Apples (sweet variety recommended)
  • 1 small piece of Ginger (thumb-sized)

Rib Marinade
  • 1 Cup Soy Sauce (200ml)
  • 1/4 Cup Mirin or Cooking Sake (50ml)
  • 1/3 Cup Plum Extract (Maesil Extract) (65ml)
  • 1/4 Cup Brown Sugar (50g)

Optional Ingredients
  • Green Onion, as desired (thinly sliced)

Cooking Instructions

Step 1

Prepare LA Galbi: Start with fresh LA Galbi. If not using immediately, store it in the refrigerator.

Step 2

Rinse to Remove Blood: Thoroughly rinse the short ribs under cold running water to remove any bone fragments or impurities. This step is crucial for a clean taste.

Step 3

Trim Fat and Soak for Blood Removal: After rinsing, pat the ribs dry with paper towels. Trim away any excess fat. Soak the ribs in cold water for at least 1 hour, changing the water several times. Soaking is essential to eliminate any gamey odors.

Step 4

Drain Excess Water: Once the blood is sufficiently removed, place the LA Galbi on a colander to drain any remaining water. This ensures the marinade will adhere well.

Step 5

Prepare Blender Ingredients: Chop the radish (about 100g), onion, whole garlic head, 4 apples, and a thumb-sized piece of ginger into large chunks for the blender. Using sweet apples will enhance the marinade’s flavor.

Step 6

Blend Marinade Ingredients: Place the chopped vegetables and fruits into a blender and process until smooth. (Tip: If your blender isn’t very powerful, you can blend in batches or strain the blended mixture to use only the juice for a smoother marinade.)

Step 7

Prepare Green Onion: If using, wash and thinly slice the green onion. This will add a fragrant aroma when cooked with the ribs.

Marinate the Ribs: In a large bowl, combine the drained LA Galbi with the blended marinade ingredients, 1 cup soy sauce, 1/4 cup mirin, 1/3 cup plum extract, and 1/4 cup brown sugar. Mix well by hand, ensuring the marinade coats every piece of meat. (Tip: For even marination, layer the ribs, then the blended mixture, then the soy sauce-based marinade, repeating if necessary. Finally, add the sliced green onions and mix. Marinate in the refrigerator for at least 1 hour and 30 minutes for the best flavor infusion.)

Step 9

Remove Excess Marinade Before Grilling: Before cooking, gently scrape off any large chunks of the marinade from the ribs. Excess solids can cause the meat to burn. Aim for a thin coating of marinade. (Tip: This helps the galbi cook evenly and remain tender.)

Cook the Galbi: Grill or pan-fry the LA Galbi until cooked through and nicely browned. (Tip: Sprinkle with sesame seeds for extra flavor and visual appeal just before serving. Ground sesame seeds can also be used.)
