  • 1 Tbsp cooking wine (like Mirin)

This is the first step to preparing your fresh pork shoulder. If you’re concerned about any gamey odor, start by rinsing the 300g of pork shoulder thoroughly. Then, sprinkle 1 tablespoon of cooking wine and a pinch of black pepper over it for seasoning. This process not only enhances the pork’s natural flavor but also effectively removes any unwanted smells. It’s important to highlight the inherent taste of the ingredients!

Now, it’s time to create the delicious soy marinade. In a bowl, combine 1 tablespoon of soy sauce, 2 tablespoons of oligosaccharide, 2 tablespoons of minced garlic, and 1 tablespoon of tuna extract for that extra umami kick. Mix everything well. Marinating the pork in this mixture allows the flavors to penetrate deeply, making it even more delicious. Ideally, letting it marinate in the refrigerator for 1 to 2 days will deepen the flavor further, but if you’re short on time, using it immediately is perfectly fine too. I personally only let it marinate for less than 30 minutes before cooking, as I planned to cook it soon after.

The key here is to cook it until it’s nicely browned and the marinade is almost completely reduced, similar to how you would cook Bulgogi, rather than having a lot of liquid.
