Main Ingredients
  • 600g prepared mackerel (cut into approx. 2-3 pieces)
  • 200g Korean radish (cut into thick slices, about 1.5cm thick)
  • 1 Cheongyang pepper (finely chopped)
  • 1 Red chili pepper (finely chopped)
  • 1/2 Green onion (cut into large pieces)
  • 400ml Anchovy broth (or water)

Delicious Braising Sauce
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 4 Tbsp Soy sauce
  • 1 Tbsp Minced garlic
  • 1 Tbsp Cheongju (rice wine)
  • 1/2 Tbsp Oligodang (corn syrup or rice syrup)
  • 1 tsp Sesame oil
  • 1 tsp Toasted sesame seeds
  • 1/2 tsp Ginger powder (or a little minced ginger)
  • A pinch of black pepper

Cooking Instructions

Step 1

To effectively remove any fishy smell, soak the fresh mackerel in rice water for about 10 minutes. This step before cooking will ensure a much cleaner and tastier braised dish.

Step 2

To make the delicious braising sauce, add 2 tablespoons of gochugaru (Korean chili flakes) to a bowl.

Step 3

Add 4 tablespoons of soy sauce.

Step 4

Generously add 1 tablespoon of minced garlic.

Step 5

Add 1 tablespoon of cheongju (rice wine) to eliminate any lingering odors and enhance the savory flavor.

Step 6

Add 1/2 tablespoon of oligodang (or corn syrup/rice syrup) for a touch of sweetness.

Step 7

Stir in 1 teaspoon of sesame oil for added aroma.

Step 8

Finally, add 1 teaspoon of toasted sesame seeds for a nutty finish.

Step 9

Add 1/2 teaspoon of ginger powder (or a tiny amount of minced fresh ginger) for a subtle warmth and fragrance.

Step 10

Finally, add a pinch of black pepper and mix all the ingredients thoroughly to create a flavorful braising sauce. Making the sauce in advance can help speed up the cooking process.

Step 11

Arrange the thickly sliced Korean radish (about 200g) at the bottom of the pot. Placing the radish first prevents the mackerel from sticking to the bottom and allows the radish to absorb the delicious sauce, making it even tastier.

Step 12

Pour the prepared 400ml of anchovy broth (or water) into the pot and bring it to a boil over high heat. Once the broth starts boiling, proceed to the next step.

Step 13

Carefully place the mackerel, which has been soaked in rice water, on top of the radish slices. As the fish cooks, its juices will meld with the refreshing flavor of the radish.

Step 14

Evenly pour the prepared braising sauce over the mackerel. Bring to a boil over high heat, then reduce the heat to medium-low and simmer until the sauce is reduced by about half. Basting the fish with the sauce occasionally will help the flavors penetrate deeper into both the mackerel and the radish.

Step 15

Prepare the green onion, cut into large pieces (about 1/2 stalk).

Step 16

Slice 1 red chili pepper to add a visually appealing color.

Step 17

Add 1 Cheongyang pepper, chopped, for a touch of spice. Finally, add the prepared green onion, red chili pepper, and Cheongyang pepper, and simmer for just 1 more minute to complete this delicious braised mackerel with radish. Be careful not to overcook, as the vegetables might become too soft.

Step 18

The finished braised mackerel is incredibly tender, and the sauce is deeply infused, making it absolutely delicious! If you’re wondering what to cook for dinner tonight, I highly recommend this recipe. It’s guaranteed to make you finish a bowl of rice in no time!

Step 19

May your dinner table be filled with happiness and warmth as you share this meal with your loved ones. Enjoy your cooking!
