Main Ingredients
  • Prepared dried shredded squids (Jinmi-chae) 120g
  • Sesame oil 1 Tbsp
  • Sesame seeds to taste

Sweet & Spicy Sauce
  • Water 3 Tbsp
  • Gochujang (Korean chili paste) 1 Tbsp
  • Mayonnaise 1 Tbsp
  • Soy sauce 1 Tbsp
  • Sugar 1 Tbsp
  • Minced garlic 1/2 tsp (approx. 1 coffee spoon)
  • Mirin (rice wine) 1 Tbsp (optional)

Cooking Instructions

Step 1

To make the jinmi-chae extra tender and moist, place it in a bowl and soak in lukewarm water for about 10 minutes. This step significantly improves the chewy texture.

Step 2

Gently drain the water from the soaked jinmi-chae using a sieve. Then, cut it into bite-sized pieces. If they are too long, it can be difficult for children to eat, so cut them into appropriate lengths.

Step 3

In a bowl, combine the prepared jinmi-chae with 3 Tbsp water, 1 Tbsp gochujang, 1 Tbsp mayonnaise, 1 Tbsp soy sauce, 1 Tbsp sugar, 1/2 tsp minced garlic, and 1 Tbsp mirin (optional). Gently mix everything together with your hands, ensuring the seasoning coats the jinmi-chae evenly. Adding mayonnaise helps prevent the sauce from burning and makes it smoother.

Step 4

Heat a pan with a little olive oil over medium-low heat. Add the seasoned jinmi-chae and stir-fry for 2-3 minutes, constantly tossing to prevent burning. This process allows the sauce to be well absorbed into the jinmi-chae.

Step 5

Just before turning off the heat, drizzle about 1.5 tablespoons of oligosaccharide (or corn syrup) for added gloss and sweetness. Finally, stir in 1 Tbsp sesame oil and a generous amount of sesame seeds. Stir for about 1 more minute, and your delicious stir-fried jinmi-chae is ready! It’s the perfect side dish for rice!
